First Day of School 2013!

It was a rainy first day of school for my two...

But it was an awesome first day of school too!!

So glad they both had a good day and like all of their teachers and schedules. Shelby was excited to have lunch with her best friend and boyfriend.  

Thomas has already found a cute girl he likes. Hee Hee!!  And he had his first football practice after school.

Other than the mountain of paperwork I have to fill out and more school supplies to hunt for...all is going well so far...

Here's to a great school year!!

Healthy Fried Zucchini!



As my first post back on the blog I wanted to share this fabulous recipe!! I have always had a weakness for fried zucchini drenched in ranch dressing from Italian restaurants. LOL! So yummy but oh so bad!! :)

I love getting recipes from www.sixsistersstuff.com, especially their healthy recipes like this one. I'm sure I will be posting a lot of their recipes as I make them. I wish I would have started doing this months ago as I have already made and tried so many of their recipes.

As I've been TRYING to lead a healthier lifestyle and eat better, this is an example of the kind of recipes I'm looking for...so if you have any, please share with me!!

On to the recipe...

Ingredients:
6 egg whites
1/4 of low fat milk
2 medium zucchinis
dash of parmesan cheese - the real stuff...not the powder cheese!
salt and pepper to taste
low fat or fat free ranch

Directions:
Heat skillet to 300 degrees. Spray with cooking spray. I use Crisco Spray.  Wash and cut the zuchini into circles about 1/4" thick or thinner if you like it more tender like I do.

Whisk the egg whites, milk and salt & pepper in a measuring cup or small bowl.

Once the skillet is warmed up, dip the zucchini circles in the egg mixture and place in skillet. Cook on both sides until golden brown.

Put on a plate, throw a dash of parmesan on top if desired, and serve immediately with ranch.
ENJOY!!!!

It's as simple as that! I made this the other night with a healthy meatloaf and they are delicious and addicting if you like zucchini. :)  James absolutely loved it and couldn't get enough.  Will definitely use this recipe again!! Try it out and give me feedback on your thoughts.
